Zucchini Pizza

Today's Post is not my original idea.  This is a Facebook post that I just wanted to try.  It is wonderful.  Very Healthy and very easy.
In this recipe I used: three nice sized zucchini, two medium sized tomatoes (from the garden),   Parmesan cheese grated from a block, fresh cracked pepper , fresh ground salt with dried garlic, (this I get at World Market) (fresh garlic would also be great), extra virgin olive oil, basil and parsley (from the garden).
The sky is the limit mix and match your ingredients or use what you have on hand.
Preheat your oven to 425 degrees

Slice your zucchini in half if they are big you may want to slice them lengthwise in to thirds.
Place them cut side up on the non stick baking sheet.
Drizzle with olive oil
Salt and pepper to your liking
sprinkle lightly with Cheese
slice tomatoes in to thin slices lay on top
fine chop the parsley and basil and sprinkle on top
Lightly add another sprinkling of cheese
Salt and pepper again to taste.
bake in the oven until the cheese starts to brown and the zucchini is tender not mushy.
Let cool for 10 mins. and enjoy!
